Title: Ginger Limeade

Yield: 4 Servings

1cGranulated sugar
2cTap or bottled water
1 Pc ginger about the size of
  An index finger, cut into
  Thick slices
1 1/4cFresh lime juice (about 10
  Limes)
1ptCarbonated water
  Mint sprigs to garnish
  (optional)

In a small saucepan, combine the sugar and 1/2 c plain water. Bring to a boil, stirring frequently over high heat, and boil 1 min to make a syrup. Remove from heat, pour into a pitcher and allow to cool.

In the same saucepan, combine the remaining 1 1/2 c water and the ginger, and bring to a boil over high heat. Reduce the heat to low, and simmer for 20 min. Remove from heat, add to the sugar syrup and allow to cool.

While the ginger is simmering, juice the limes. When the sugar-ginger mixture is at room temperature, add the lime juice and mix well.

Fill 4 glasses with ice water or crushed ice. Add enough lime juice mixture to half fill the glasses, then fill to the top with carbonated water. Serve garnished with a mint sprig if desired. :From NY Times 6/18/97
